Today’s recipe, is a special one. First off, this is the first recipe I’m posting since transitioning this weekly newsletter to Substack - excited to be starting this journey!
This is also the first “frozen burrito meal prep” recipe I ever developed back in early 2022. Since then, the high protein burrito meal prep trend has exploded - and I even have an entire chapter in my meal prep cookbook entirely focused on meal prepping burritos in bulk.
Whenever someone comes up to me in public, the most common greeting is either:
1.) “Wait, are you the burrito guy?”
2.) *Handshake*… “My freezer is full of your burritos.”
Stealth Health and frozen burritos are permanently intertwined with one another.
This recipe, is the one that started it all - and the reason I am today known by many as “the burrito guy” (something I’m quite proud of).
It’s also ridiculously simple - which is why it has become a staple in so many of your kitchens.
It makes 6 burritos that you can store frozen (and can easily be doubled or tripled), and reheat in less than 3 minutes. Way better for you and tastes way better than Taco Bell 👌.
