The Chicken Bacon Ranch Mac N’ Cheese has a unique backstory: I didn’t like the first several iterations. The concept sounded great, but for some reason - it just wasn’t coming out to my usual standards.
Whenever I’m testing recipes, or meal prepping in general, I use compostable bamboo containers - part of the benefit is that this makes sharing meals much easier. I’ll usually take a sharpie to the side, sometimes I’ll write a fully written recipe name, sometimes a simple abbreviation. For the Chicken Bacon Ranch recipe, I simply wrote “CBR” - and since I had tested it multiple times, I had upwards of 30 of them in my freezer. Every now and then, I’ll let friends come take meals from my freezer to clear out new space for recipe development. So one way or another, the failed test batches of “CBR” ended up spread across my friend’s freezers.
I had completely scrapped the recipe and moved on - and then a few months later, I got a text:
“What’s CBR?”
“Oh, that was a test batch that was supposed to be a Chicken Bacon Ranch Mac ‘n Cheese, wouldn’t recommend that one - couldn’t get it to work”
“What? I’ve been eating it every day for weeks, this is literally my favorite recipe you’ve ever made”
That was enough to re-ignite my interest. I went back for a couple of final tweaks - and CBR was given another chance at life.
Since then, it has become one of the most popular and loved recipes from the Slow Cooker Cookbook.
