Today’s recipe is the one that kicked off my burrito series on social media in 2024, and is one of the 34 burritos and breakfast sandwich meal preps I created for my meal prep cookbook!
I truly believe burritos are one of the greatest vessels for meal prep - and the flavor variations are endless. One of my goals for the future is to write an entire cookbook entirely devoted to burritos - but until then, I’ll just continue sending them here!
Since I often get asked which tortillas I like to use most, the tortillas shown in the images for this recipe are the Counter Protein Tortillas - but since not everyone has them, the macros assume you’re just using a standard flour burrito tortilla. That being said, using the Counter tortillas will cut out ~13g of carbs and add ~6g of protein per burrito (and they taste better).
