Welcome to the 3rd edition of the Stealth Health Meal Prep Weekly!
This week we're making Carne Asada - and we're making a lot of it.

It tastes so good that you'll understand why I like to make so much of it at once. Plus, since it's designed to be grilled, it's ideal for making in bulk since you can throw it all on at once.
It’s an incredible “Protein Prep” (aka, “meal prepping” just the Carne Asada, storing on it's own, then reheating + using it as an ingredient to make meals throughout the week) - serve over fresh steamed rice, or use for quesadillas, burritos, or tacos in less than 5 minutes. Usually I just pull it straight out of the freezer and microwave for 2-3 minutes - but you could also toss it in a skillet with some oil to bring it back to life.
If you prefer meal prepping the full dish - this week includes incredibly simple recipes for cilantro lime rice and a 1-minute corn salsa that requires essentially zero prep work. Finish it off with any of your favorite fresh burrito bowl toppings, and enjoy a much better tasting and cheaper version of Chipotle.
